This premier cru Chablis from Laroche is made by collecting whole bunches in a pneumatic press, then settling the juice for 12 hours at 10 to 12°C in large tanks. Fermentation then takes place in 228-litre oak barrels, before 6 months of ageing, also in oak. Minimal filtration is used to preserve and maximise the natural character of the wine.
