Shii-take mushroom are delicious sauted, baked, grilled, stir fried, or sliced thin and used raw on salads. Its meaty flavour enhances almost any dish. Use the stems to create deeply flavored stocks. Shii-take are not the easiest mushroom to grow and take a long time to fruit so are not recommended for beginners. Initially started on an industrial scale, the method of growing oyster mushrooms on tree tunks is now only used for hobby purposes and we suggest that you start with our mycelium (spawn) which is specially designed for this. General informationInnoculation is possible all year round but it is best to do it between April and June. You can plant out the inoculated trunks from August to October and mushrooms will grow from autumn to spring for three consecutive years. The mushroom production is equal to about 20% of the weight of the green wood used (1/2 in 1st year, 1/3 in 2nd year and 1/6 in 3rd year).
