Second generation Burgundy producer Phillipe Chavy still owns the plots of vines planted by his father back in the 1950s, but employs more modern winemaking techniques, with pneumatic presses and gentle filtration to preserve his wines purity of fruit. Fermented in oak cask, this Puligny has a nutty complexity, while the emphasis is still on fineness of acidity and a mineral-tinged freshness.
