Grapes from Adelaide Hills in South Australia are harvested in the early morning before a fast fermentation with minimal oxygen contact to to maximise fruit flavours and retain freshness. Four months lees ageing is followed by some time in French oak barrels. Flavours of citrus and stone fruit, combined with a creamy mouth feel, make this an attractive Chardonnay. Well balanced acidity gives the wine a dry and refreshing finish. With white meats and less delicate fish such as monkfish or cod.
