Located in south-eastern Spain inland from Alicante, the high, hilly vineyards of Jumilla have never been affected by phylloxera and so most of the vines are still ungrafted. The Olivares vineyards are all located in the Hoya de Santa Ana sub region of Jumilla whose altitude (825m, the highest in the DO) ensures nights that are considerably cooler than the rest of the appellation and extended ripening of the grapes leading to better balanced wines with greater aromatic development.
