Lycopene is an anti-oxidant: one of the carotenoids found in red-coloured fruits. Tomatoes provide us with the richest source of Lycopene. Increased consumption of foods rich in carotenoids is associated with decreased risk of some degenerative diseases, with evidence that they improve immune function. Most people eat on average 5mg carotenoids daily. The recommended protective level is four times that (20mg). Anti-oxidants provide a first line of defence in protecting our bodies against free radical damage. The carotenoids have specific tissue affinities, with Lycopene being protective to tissue of the breast, prostate and cardiovascular and respiratory systems.
