After having tried a couple of smokers I switched to a Bradley about 15 months ago.
I have hot and cold smoked a whole range of food from mackerel, pollock, haddock and other fish through to meat, cheese and vegetables and the results are excellent.
It is very easy to set up and operate and it runs on a proprietary brand of bisquettes also produced by Bradley in a whole range of `flavours`! Running costs when smoking are currently around £1 per hour in the UK, availability seems fine either through independent retailers or from the UK agent.
Bisquettes feed automatically and attention needed during the smoking period is minimal. It takes a little bit of experience to get temperature stability correct and a water bowl needs changing after 4 hours.
Most users buy a remote thermometer as the one built into the unit only monitors cabinet, not food temperature. There are also smaller meshed racks available which are recommended.
The unit that generates the smoke is a separate unit that can be attached to the Bradley smoke cabinet or purchased separately for use with a home made cabinet. (e.g old fridge) There are a few reliability issues with the smoke generator, however problem ones are replaced without issue by the UK agent as I found out, I needed 2 replacements before I ended up with a reliable one.
There is an excellent forum for anyone interested in smoking food where just about any question will be answered quickly by a number of very experienced smokers.Prospective purchasers are advised to have a look at the forum and or ask any questions they may have before purchase.
The various racks, trays and bowl used with the smoker are all dishwasher safe and there is very little cleaning and maintainence to be performed other than cleaning these items.
I understand new models are due out later in the year (2006) with larger capacity and improved temperature control but date of release in the UK is unknown.
