This forged 3 inch peeling/paring knife from Global is just the right size to peel or dice small herbs, and pare fruits and vegetables. Global knives are crafted in the Samurai sword tradition and lend distinction to the chef, whether professional or amateur. Global knives are made from the finest Cromova 18 stainless steel, ice tempered and hardened to Rockwell C56-58 degrees which holds a razor sharp edge longer and resists rust, stains and corrosion. To ensure a long lasting cutting edge, the blade of a Global knife contains a high level of carbon. It is necessary therefore to wash and dry immediately after use to avoid damage.
