This wine is from France, Languedoc Roussillon region, Languedoc sub-region and Coteaux Du Languedoc appellation. The legend of Vinus, the Heron, started on the Herault River banks, at the foot of Chateau Paul Mas in Pezenas. Languedoc Grands Crus and Grands vins, from our vineyards in Pezenas or Montagnac, at the Nicole Estate, make up this range, which is complemented by varietal wines with distinct character. Chateau Paul Mas is made of 2 Estates: the Castle and a 25-ha vineyard in Conas, near Pezenas, the cellar and a 80-ha vineyard in Nicole, near Montagnac. This is where we produce the cuvees Chateau Paul Mas, Vinus, Vignes de Nicole, Paul mas Estate and Paul Mas. Our labels feature Vinus the heron in front of the Conas castle.. Colour: Intense Deep purple colour with purple tints. Nose: At first intense blackberry note followed by truffle and mocha notes. Violette and floral flavours are adding to the complexity of the sine.. Palate: Full bodied , opulent with velvety tannins. Blackcurrent flavours on the middle palate, liquorice flavours on the finish. Long and soft finish. Cellaring: If kept in good conditions (15 C and bottle laying down) this wine will age perfectly for the next 10 years.. Best served at 17 C. Beringer Founders’ Estate winemaker, Ron Schrieve, believes in getting his boots dirty” and walking the vineyards daily during harvest to determine just the right time to pick. I wish we got frequent-driver miles, because I’d have a million of them from running up and down the state,” he says. But tasting grapes is the only way I can be sure I’m getting as much flavor as possible.” As each vineyard block reached the peak of maturity, the Cabernet was harvested and rushed to the winery, and Ron kept each lot separate until he assembled the final blend. After vinification, Ron aged the wines in French and American oak barrels for 12 months, helping the flavors come together and imparting sweet oak and brown spice nuances.
